El Grifo Malvasía Volcánica

The vines here grow in individual pits dug into black lava rock, walled against the wind, each one tended like a small shrine. What comes out is briny and floral at once. Apricot skin, sea spray, a low hum of smoke. It tastes like an island that had to fight to grow anything at all, which makes it taste like resilience.
